Abstract
This paper explores the changes in fresh food consumption behavior before and during the 4th COVID-19 wave in Ho Chi Minh City. In this study, 329 observations were collected through questionnaires during the period from May 2021 to October 2021. The study used descriptive statistical analysis to find out whether or not there are changes in consumption behavior caused by the COVID-19 pandemic. The results show that, before the COVID-19 pandemic, buying channels, including supermarkets, convenience stores, and traditional markets, were prioritized, e-commerce, and social networks were rarely used. However, when the COVID-19 pandemic spread due to social distancing policies and fear of the disease, consumer behavior changed markedly. Specifically, online channels were prioritized over traditional channels.
