Xác định đặc tính sinh hóa của vi khuẩn Lactobacillus spp. phân lập từ sữa bò tươi nguyên liệu

Nghiên cứu được thực hiện nhằm xác định đặc tính sinh hóa của vi khuẩn Lactobacillus spp. phân lập được trên môi trường MRS agar từ nguồn sữa bò tươi nguyên liệu thu nhận tại thành phố Cần Thơ. 9 chủng vi khuẩn giả định Lactobacillus spp. phân lập được kiểm tra đặc điểm khuẩn lạc và tế bào, đặc điểm sinh hóa và khả năng lên men carbohydrate. Kết quả cho thấy, 8/9 chủng thuộc chi Lactobacillus; khả năng chuyển hóa carbohydrate của 8 chủng: 7/8 chủng có khả năng lên men lactose (87,5%), 6/8 chủng có khả năng lên men glucose (75,0%), 4/8 chủng có khả năng lên men sucrose (50,0%). Nghiên cứu cung cấp dữ liệu ban đầu nhằm định hướng ứng dụng vi khuẩn Lactobacillus trong công nghệ chế biến sản phẩm sữa.
