Determining the antioxidant and antibacterial activities on foodborne pathogens of anthocyanin-rich extracts from purple sweet potato (Ipomoea batatas (L.) Lam)

Abstract

Antioxidants from plants are mainly polyphenols, flavonoids, carotenoids, and vitamins. Extracts from plants could be potential natural sources of antioxidants, anti-inflammatories, and antimicrobial agents which can be used as a natural active pharmaceutical ingredient in functional food and nutraceutical products. This study is to determine the antioxidant and antibacterial activities on foodborne pathogens of anthocyanin-rich extracts including purple sweet potato extract and powder. The study’s results show that the extract and powder of purple sweet potato with the anthocyanin content of 1,642 mg/L and 770 mg/L, respectively, has the DPPH antioxidant activities of 12.25 (µmol TE/g) and 10.88 (µmol TE/g), respectively. The extract and powder of purple sweet potato exhibit antimicrobial activity against foodborne pathogens as Staphylococcus aureus and Escherichia coli at anthocyanin content of 100 and 200 mg/L.
