Improving the quality of food services: Case study of a restaurant Boomerang in District 7, Ho Chi Minh City

Abstract

Service quality plays an important role in the restaurant business in particular and the service industry in general. Theoretically and experimentally, the service quality has a positive correlation with the customer satisfaction. This study is to analyze the factors affecting the quality of restaurant services in order to help stakeholders make right corporate governance decisions. The study is conducted at a restaurant Boomerang in District 7, Ho Chi Minh City with 150 samples. Online survey, descriptive statistics, scale reliability assessment, exploratory factor analysis and multivariable linear regression are used in this study. The study finds out that there are several factors affecting the restaurant’s service quality. These factors listed in the desscending order of impacting level are infrastructure, facilities, equipment, machinery, means of transport, responsiveness, empathy, service capacity, trust, and communications.
