Ảnh hưởng của điều kiện sấy đến polyphenol tổng và hoạt tính chống oxy hóa của quả sung (Ficus racemosa (L.)) sấy khô

Tóm tắt

Quả sung (Ficus racemosa (L.)) là loài thực vật phổ biến, có giá trị sinh học cao nhưng chưa được khai thác và sử dụng hiệu quả.

Nghiên cứu được thực hiện nhằm đánh giá ảnh hưởng của điều kiện sấy khô đến chất lượng của quả sung, đặc biệt là hoạt tính chống oxy hóa của sản phẩm sau sấy.

Hai phương pháp sấy được khảo sát gồm:

  • Sấy đối lưu;
  • Sấy vi sóng.

Các thí nghiệm được bố trí theo thiết kế thay đổi một nhân tố. Các chỉ tiêu đánh giá bao gồm:

  • Thời gian sấy;
  • Hàm lượng polyphenol tổng (TPC);
  • Hoạt tính chống oxy hóa xác định bằng phương pháp khử gốc tự do DPPH (2,2-diphenyl-1-picrylhydrazyl);
  • Khả năng khử sắt theo phương pháp FRAP.

Kết quả nghiên cứu cho thấy:

  • Phương pháp sấy đối lưu duy trì hoạt tính sinh học của sản phẩm tốt hơn, với:
    • TPC: 39,13 ± 0,07 mg GAE/g chất khô;
    • DPPH: 38,11 ± 0,87 mg TE/g chất khô;
    • FRAP: 92,62 ± 0,96 mg TE/g chất khô.
  • Phương pháp sấy vi sóng có ưu điểm là rút ngắn đáng kể thời gian làm khô sản phẩm, với thời gian sấy chỉ 12 phút.

Kết quả nghiên cứu là cơ sở cho việc lựa chọn phương pháp sấy phù hợp nhằm bảo toàn các hợp chất có hoạt tính sinh học trong quả sung, góp phần nâng cao giá trị sử dụng của loại nguyên liệu này.
