Bài viết nghiên cứu ảnh hưởng của 1-MCP đến thời hạn bảo quản và chất lượng bơ sáp (Persea americana Mill.) tại Đắk Lắk. Quả bơ được xử lý bằng chế phẩm 1-MCP ở các nồng độ 300, 350, 400, 450 và 500 ppm trong các khoảng thời gian 10, 13, 16, 19 và 22 giờ, sau đó bảo quản ở nhiệt độ 15°C, độ ẩm không khí 85 - 90%. Kết quả cho thấy xử lý 1-MCP ở nồng độ 450 ppm trong 16 giờ cho chất lượng bơ tốt nhất về cảm quan và các chỉ tiêu hóa lý, với hàm lượng chất khô hòa tan 23,6%, protein 4,2%, lipid 11,2%, chỉ số peroxyt 3,3, chỉ số axit béo 1,59 và tỷ lệ hư hỏng thấp nhất (12%) sau 17 ngày bảo quản
