Influence of processing parameters on spray drying of soluble powder from Morinda officinalis How. root extracts

Abstract

This study evaluated the influence of key processing parameters on the spray-drying microencapsulation of instant powder derived from Morinda officinalis How. root extracts. Three extract types, including: ethanolic, aqueous, and a blended formulation, were compared in terms of recovery yield and total polyphenol content (TPC). Optimal operating conditions were identified as an inlet temperature of 140 °C, an atomizing pressure of 1 bar, and a maltodextrin carrier concentration of 25%. Among the tested samples, the ethanolic extract produced the most favorable outcomes, yielding the highest TPC (1.036 ± 0.003 mg GAE/g dry powder) while preserving the characteristic purple color and flavor of the raw material. The findings demonstrate that spray-drying microencapsulation is an effective approach for protecting bioactive compounds and producing a highly soluble powder, highlighting its strong potential for the development of convenient functional food products from this medicinal plant
