Leveraging the value of vegetarian cuisine for tourism development in Hue City
Published: October 16, 2026
Abstract
This study explores how the value of vegetarian cuisine can be leveraged within Hue City’s sustainable tourism development strategy. Through a review of domestic and international literature, combined with qualitative methods and a cultural industries approach, the study identifies considerable potential in the interplay between the former imperial capital’s cultural heritage, Northern Buddhist traditions, and local culinary identity. However, Hue’s vegetarian restaurant sector faces several limitations, including eclectic architectural styles, the concentration of establishments around the Imperial Citadel, and the lack of high-end vegetarian culinary offerings that meet royal cuisine standards. The study therefore proposes strategic management solutions to harness these culinary values more effectively and contribute to tourism development in Hue City.
