Effect of β-cyclodextrin on the efficacy of melatonin in postharvest banana preservation

Abstract

This study evaluates the effect of a melatonin (MLT)/β-cyclodextrin (β-CD) inclusion complex on the postharvest quality of bananas. The MLT/β-CD complex was prepared at a 1:1 molar ratio by freeze-drying. Bananas were assigned to five treatments: free MLT, β-CD, MLT/β-CD complex, physical MLT/β-CD mixture, and untreated control, and stored for 12 days at room temperature. Color, weight loss, browning index, chlorophyll, and carotenoid contents were evaluated every three days. The MLT/β-CD complex reduced color changes and weight loss while maintaining chlorophyll and carotenoid contents more effectively than the control and free-MLT treatments. The findings demonstrate the potential of β-CD encapsulation to improve melatonin stability and efficacy, supporting its application as a safe and environmentally friendly approach to postharvest banana preservation.
