Abstract
Rice bran, although a minor fraction of the grain, is nutritionally concentrated, with protein representing a component of high biological value and substantial application potential. This study evaluated the effect of three rice varieties (IR 50404, OM 5451, Jasmine 85) and three cultivation locations (Tam Binh, Tra On, Vung Liem) in Vinh Long province on the total protein content in rice bran. The OM 5451 variety showed the highest protein content (12.06 ± 0.22%), followed by IR 50404 (11.88 ± 0.18%); higher than Jasmine 85 (10.58 ± 0.17%). Among the regions, Tam Binh yielded the highest average protein content (12.48 ± 0.21%), followed by Tra On (11.53 ± 0.18%) and Vung Liem (10.51 ± 0.15%). The combination of OM 5451 × Tam Binh achieved the highest protein level (13.15%). These results demonstrate the potential of using rice bran as a protein source in Vinh Long and suggest that OM 5451 or IR 50404 be grown in Tam Binh when developing strategies to sustainably enhance the local rice value chain.
