Abstract
Physalis angulata L., a wild herb widely distributed in tropical regions of the Americas, is a rich source of bioactive compounds with potential antioxidant properties. This study investigates factors influencing chlorophyll and saponin retention in leaf powder with the aim of developing a safe, value-added functional product. The effects of drying conditions, including sun drying and controlled temperatures of 45, 55, and 65°C, were systematically evaluated. The results indicate that drying at 45°C to a final moisture content below 10% yielded optimal outcomes, achieving the highest chlorophyll content (0.67±0.02 mg/100 g), saponin content (0.39±0.02 mg SE/g), and antioxidant capacity (69.18±1.52%), outperforming other drying treatments. These findings highlight the critical role of temperature control in preserving bioactive compounds and functional quality in plant-based powders.
