A study on using the hydrolyzed solution of tapioca starch from the amylase-assisted hydrolysis process to make soft candy

Abstract

This study’s results show that the combination of α-amylase and glucoamylase significantly improves the hydrolysis process’s yield. Compared with rice and corn starch, the hydrolyzed solution of tapioca starch has the highest content of glucose and maltose, and the highest value of DE index. The study’s structural analysis and sensory evaluation also indicate that the soft candy, made from the tapioca starch molasses, has quite good results which have no statistically differences compared to those of soft candy made from commercial corn syrup.
