Functional characteristics and HMO production technology

Abstract

Breast milk is the best nourishment source for an infant because it provides full nutrition as well as all of the bioactive compounds needed for healthy growth throughout the first few months of life.Breast milk is primarily made up of water, lactose, lipids, and milk proteins, with a high concentration of complex carbohydrates known as human milk oligosaccharides (HMO). HMO serves a variety of biological functions in the body. This paper is to present the function of HMOs and the technological process to produce HMO in dairy products.
