Effect of reaction conditions on the lipase-catalyzed hydrolysis of coconut oil

Abstract

This study examines the hydrolysis of coconut oil to recover free fatty acids by using lipase catalysis and explores the factor affecting the hydrolysis efficiency of coconut oil. The highest yield of this hydrolysis is up to 41.3% when the coconut oil is hydrolyzed for 3 hours with the ratio of coconut oil/buffer of 1/4 and the lipase content of 3%. This study’s results are a premise to apply the hydrolysis of coconut oil to recover free fatty acids on a larger scale.
