Abstract
The study investigated the drying conditions of two drying methods, namely hot-air drying and cold-air drying, and evaluated their effects on the total polyphenol and chlorophyll contents of Cleistocalyx operculatus leaves.
The results showed that the cold-air drying method at a drying temperature of 50°C for 180 minutes produced Cleistocalyx operculatus leaf powder with a dark green color, fine texture, and retained the characteristic aroma of the leaves.
The analysis of the cold-air-dried leaf powder indicated:
Moisture content: 5.73 ± 0.01%;
Total polyphenol content: 45.30 ± 0.15 mg/g;
Total chlorophyll content: 6.78 ± 0.31 mg/g.
These findings suggest that cold-air drying under the selected conditions is effective in preserving the bioactive compounds and natural color of Cleistocalyx operculatus leaves.
