Abstract
In this study, the Maxigest lipase is used to hydrolyze salmon oil in order to obtain unsaturated fatty acids including monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). The study analyzes the factors of Maxigest lipase affecting the salmon oil hydrolysis process’s yield. With the alcohol/material ratio of 9/1 (v/w), 90% alcohol and 1.5% enzyme rate, the unsaturated fatty acid content is obtained at 78.7 percent. In which, MUFA is 54.6% and PUFA is 24.1%
