Bài viết tập trung vào những thay đổi trong hành vi tiêu dùng thực phẩm tươi sống trước và trong thời gian bùng phát dịch Covid-19 lần thứ 4 tại Thành phố Hồ Chí Minh (TP. HCM). Với 329 quan sát được thu thập qua bảng hỏi trong khoảng thời gian từ tháng 5/2021 đến tháng 10/2021, nghiên cứu sử dụng phương pháp thống kê mô tả để tìm hiểu liệu có hay không sự thay đổi trong hành vi tiêu dùng do dịch bệnh Covid-19 gây ra. Kết quả cho thấy, trước khi bùng phát dịch Covid-19 tại TP. HCM, các kênh mua: siêu thị, cửa hàng tiện lợi, chợ truyền thống được ưu tiên lựa chọn, thương mại điện tử, mạng xã hội ít được sử dụng thường xuyên. Tuy nhiên, khi dịch Covid-19 xảy ra, với những chính sách giãn cách xã hội, hạn chế y tế và tâm lý lo sợ dịch bệnh, hành vi của người tiêu dùng có sự thay đổi rõ nét. Cụ thể, các kênh trực tuyến được ưu tiên lựa chọn, tỷ lệ gia tăng đáng kể, trong khi đó, các kênh truyền thống có sự giảm sút bất ngờ.
