Abstract
Natural antioxidant compounds have garnered significant attention for their potential in disease prevention and safety for human health. This study focuses on the extraction and evaluation of antioxidant activity from pomegranate peel. Using 96% ethanol as the solvent, the extraction process was conducted at room temperature for 24 hours, yielding an enriched extract with a total polyphenol content of 122.2 ± 0.23 mg GAE/g. The antioxidant capacity of the extract was assessed using the DPPH free radical scavenging assay, resulting in an IC50 value of 3.58 µg/mL, comparable to that of vitamin C (IC50 = 3.12 µg/mL). These findings highlight the potential of pomegranate peel extract as a potent natural antioxidant.
